Inspired by trips to Pajottenland Lambic cafes this beer is a blend of several brews and barrels spontaneously fermented and aged for a year.  The beer contains brews using 3 years old aged Fuggles and Cascade  alongside wet hops from the 2023 harvest and freshly processed Cascade from the 2023 Crop
