blisteringly hot summers and cold winters. The terroirs here has to be one of the most
underknown and underrated in Europe. As the crow flies the vines are 100km from the coast of Africa, but they sit between 950 and 1250m above sea level, so hot days settle into cool evenings and the resulting wines ultimately harness the extremes of ripeness and acidity and bring a balance on the palate.

Torcuato Huertas’s family have been making wine in Marchal since the late 1800s, however Torcuato is of the first generation in his family to use oak barrels. Previously everything was elaborated in clay amphorae.
The wine
Purulio Blanco is made with 10 different varieties of white grape grown on a single sheltered plot adjacent to the village, 950m above sea level on soft clay soil. Each variety generally ripens at a different time and is henceforth harvested separately throughout late August to early September. The grapes are left to macerate on skins for 3 – 5 days before beingseparated and passed to old oak barrels where the wine rests for 6 months. It then spends a couple of months in stainless steel vat before bottling.
