We've been extremely humbled and lucky to work overseas with some of the best breweries and festivals on the planet this year - a sign of where we want this brewery in a sleepy corner of North Wales to be. Whilst we were working in Norway over the summer, we struck up a friendship with Polish pastry sour slingers, Funky Fluid. Whilst chewing the fat and talking all things water chemistry, pitching rates and the assorted fluff brewers harp on about, the conversation naturally swayed toward what kind of beer we could brew together. Opting to go down the pale and hoppy route after hearing their interest in working to our dry-hopping rate, and utilising HBC-630 which they really vibed off, the result is Chameleon - possibly our stickiest, most decadent DIPA to date.
