Fine Wine from Our Bottle Shop and Taproom:
Costa D’Or (or Costador) Terroirs Mediterrani are around 15 different plots, scattered
around Tarragona province, mostly centred around Conca de Barberà, with mountainous as well as Mediterranean influences. The soil around here is mostly calcareous and this limestone minerality shines through in all of these wines. Costa D’Or farm all their vines organically, the only intervention in vineyard is the use of pheromones to repel pests, a little copper and sulphur if and when needed and sometimes the use of sodium bicarbonate to prevent powdery mildew.

Brisat is the old Catalan word for orange or skin contact white wine, and Joan’s
Metamorphika Moscat is quite a gentle skin contact. The grapes are carefully destemmed and then the whole berries are placed in amphora where they are left to ferment at 12 degrees over a 6 week period. This is opposed to a pressing off with a daily punch down where the wine would macerate on skins and take on a lot more colour and tannin.
Joan’s intention is for a more gentle and elegant wine.
After fermentation on skins the wine is passed to old French oak where it rests on lees
for a further 7 months before being bottled. Very minimal sulphur added before bottling.
