The little-known Pecorino grape (not the cheese!) is indigenous to the central wine regions of Italy. Archivio comes from Chieti in the Marches.
It is a pale skinned and grows well at altitude, up to 1000m – hardy and resilient in cool temperatures.
Traditional vinification employing a reduction technique is used in the making of this wine. There is an initial pressing, then four hours maceration followed by a further soft pressing and cooling of the must. Fermentation of about ten days is at a controlled temperature, then there is a long contact with the lees.
Vibrant yellow colour; intense nose of apricot and banana with subtle spice notes. The palate is well structured with exotic fruits balanced with mineral notes.
Will age well.
